So here we go. Cornmeal pancakes that are yum beyond belief, and incredibly simple to make.
|Poppy's portion. She ate almost all of it, after her usual glass of milk in the morning|
3/4 cup whole wheat flour (or normal all purpose flour if you don't have any)
1/4 cup yellow cornmeal
2 small eggs
3/4 cup milk
1 tsp baking soda
1/2 tsp salt
How to make it
Mix flour and cornmeal together, then add baking powder and salt, followed by eggs and finally, milk. Mix well. Mixture might look a little runny but that's totally ok
Spoon about 2 tbsp worth of mixture onto lightly greased pan (I used butter), and flip over when bubbles form and pop
Confession: Sometimes we make pancakes and we kinda of have to force ourselves to finish them cos we really don't like wasting food (hello, expanding waistline!). But for this recipe, I'm very proud to say that I was worried there wasn't enough. We ended up eating the right amount of pancakes each. So the above is good for 2 adults + 1 child with a reasonably healthy appetite.
